Date Varieties Explained: Ajwa, Medjool, Kalmi and the Rest

by Kashmir Online Store 14 Oct 2026

Dates are sold by variety, and the varieties are genuinely different: in texture, in sweetness, in price and in what they suit. Ajwa, Medjool, Kalmi, Mabroom, Sughai, Amber, Barari. Most listings say premium and leave it there.

Here is what each one actually is, so you buy the one you will enjoy rather than the one with the best packaging.

The varieties, compared

Variety Texture Sweetness Character Price
Ajwa Soft, slightly dry, fine Mild Small, almost black, subtle. From Madinah High
Medjool Very soft, fleshy, sticky Very sweet, caramel Large, the dessert date High
Kalmi Firm, chewy, drier Moderate Dark, elongated, holds its shape Moderate
Mabroom Firm but tender, slightly chewy Moderate Long, slender, reddish brown Moderate to high
Sughai Two textures in one date: dry tip, soft base Moderate Distinctive, worth trying once Moderate
Amber Soft, meaty, large Sweet, mild Among the largest dates High
Barari Soft, long Sweet Tunisian, often sold on the branch Moderate

What to check before buying

  1. Glossy is a warning, not a feature. Dates are naturally matt. A mirror shine usually means a glucose or sugar syrup glaze, used to make older dates look fresh.
  2. Whole and unbroken, with the skin intact rather than split and weeping.
  3. Not rock hard. A date should give when pressed. Hardness means age or over-drying.
  4. Not fermented. A boozy or sour smell means moisture and time.
  5. With stones or pitted? Seedless means the stone was removed. Pitted dates bruise more easily.
  6. Origin. Ajwa comes from Madinah; Medjool is grown in several countries. A seller should name it.
  7. Packing date. Dates keep, but they dry and harden as they age.

The white coating on dates

Dates often develop a white film. Almost always this is natural sugar crystallising on the surface as moisture leaves: harmless, and common in older or refrigerated dates.

  • Sugar bloom: dry, powdery, evenly spread, smells of date.
  • Mould: fuzzy, raised, patchy, often greenish, with a musty smell.

If it is bloom, warm the dates slightly or just eat them. If it is mould, discard the pack.

Medjool dates, large and soft
Natural dates are matt, not glossy. A mirror shine usually means a syrup glaze.

Storing dates

  • Airtight container, cool and dark. Soft dates such as Medjool keep best in the fridge.
  • Firm dates such as Kalmi are fine in a cupboard for a while, longer in the fridge.
  • Let refrigerated dates come to room temperature before eating; cold flattens the flavour.
  • Hardened dates are not wasted: steam them for a minute or soak them briefly in warm water or milk.
  • Keep them away from nuts in a shared box. Dates carry moisture and will soften almonds and walnuts: see how to store Kashmiri dry fruits.

Dates in Ramadan

Dates are traditionally eaten to break the fast, and demand rises sharply through the month. Two practical points: order by mid-Ramadan at the latest, because couriers slow down in the last ten days, and buy a firm variety if the dates will sit out on a table all evening. Gifting notes for the season are in Kashmiri gift ideas for weddings, festivals and occasions.

Honest notes

Dates do not grow in Kashmir. Ours come from the Middle East and North Africa, and the product pages say so. Dates are also naturally high in sugar, as all concentrated dried fruit is: they are food, not medicine, and we make no health claims about them. Anyone managing a dietary condition should ask a doctor rather than a shop.

Kalmi dates
Seven varieties, named individually
Dates (Khajoor)

Ajwa, Medjool, Kalmi, Mabroom, Sughai, Amber and Barari. Not grown in Kashmir, and we say so.

Common questions

Which date variety is the best?

They are different rather than better or worse. Medjool is the sweetest and softest, Ajwa the mildest, Kalmi the firmest and best value for everyday eating.

Why are Ajwa dates expensive?

They come from a specific area around Madinah, the supply is limited and demand is high, particularly in Ramadan.

What is the white stuff on my dates?

Usually natural sugar crystallising on the surface. Mould is fuzzy and patchy with a musty smell.

Should dates be refrigerated?

Soft varieties like Medjool, yes. Firm ones keep in a cupboard for a while. Bring them to room temperature before eating.

Are seedless dates a different variety?

No. Seedless means the stone was removed.

Do dates grow in Kashmir?

No. They come from the Middle East and North Africa.
