Why the stone stays in
People ask why Medjool is not sold pitted. Removing the stone opens the fruit to air, and a date this soft loses moisture straight through that opening — within weeks it stiffens and dulls. The stone works as a stopper. Slit it out yourself when you need to, seconds before use.
White spots are sugar, not mould
