Why the stone stays in
People ask why Medjool is not sold pitted. Removing the stone opens the fruit to air, and a date this soft loses moisture straight through that opening — within weeks it stiffens and dulls. The stone works as a stopper. Slit it out yourself when you need to, seconds before use.
White spots are sugar, not mould
Sugar migrates to the surface of a soft date and crystallises there. Sugar bloom is fine, even and smells of nothing; real mould is fuzzy, coloured, patchy and smells off. If you are unsure, send us a photograph on WhatsApp.

Questions
Why do they still have the stone in?
Pitting opens the fruit to air, and a soft date loses moisture through that opening. Leaving the stone in keeps Medjool plump and sticky for far longer.
Can they replace sugar in recipes?
Yes, and it is one of the main reasons people buy them. Blended into smoothies, energy balls and baking, Medjool sweetens while adding body — remove the stone first.
What are the white spots?
Crystallised fruit sugar, not mould. Real mould is fuzzy, coloured and smells off; sugar bloom is fine, even and smells of nothing.
How should I store them?
Sealed and refrigerated, especially in warm weather. Bring them to room temperature before serving — cold mutes the flavour.
