Pista Buying Guide: Salted vs Plain, Shelled vs Unshelled, Kishori Explained

by Kashmir Online Store 14 Oct 2026

Pista is sold under more confusing labels than almost any other nut. Kishori, Iranian, Akbari, Fandoghi, green pista, salted pista — some of these are varieties, some are grades, and some are just marketing. Here is what each term actually means when you are choosing a pack.

First: pistachios are not a Kashmir crop

We say this on every nut page where it applies. Pistachio does not grow commercially in Kashmir — the trees need long, hot, dry summers and India's supply comes largely from Iran, Afghanistan, the US and Turkey. Anyone selling you “Kashmiri pista” is selling you imported pista with a Kashmir label on it.

What a Kashmir-based seller can legitimately offer is grading and freshness. We source and pack them; we don't pretend they grew here.

The terms you'll see on packs

Term What it means
Kishori An Iranian type with a long, slender shell and a noticeably green kernel. Usually the premium tier in Indian retail.
Akbari The largest Iranian grade, elongated. Commands the highest price where available.
Fandoghi Round, smaller, the most common and most affordable Iranian type.
Jumbo / Californian US-grown, large and reliably uniform, usually roasted and salted. Shell colour tends to be paler.
Green pista Describes kernel colour, not a variety. Deep green kernels are prized for mithai and garnish.

Why green matters (and when it doesn't)

Kernel colour comes down to variety and harvest timing — earlier-picked nuts are greener, later ones shade toward yellow. Green kernels are not more nutritious; they are visually prized, which is why halwais pay more for them and why ground pista for mithai and kulfi is bought on colour.

If you are eating them by the handful, colour is irrelevant. If you are garnishing kheer or making pista barfi, it is the main thing you are paying for.

Shelled or in-shell?

This is a cost and use decision, not a quality one.

  • In-shell is cheaper per kilo of total weight, but roughly 45–50% of that weight is shell. It stays fresher longer because the shell protects the kernel, and it slows down snacking — which some people consider a feature.
  • Shelled (unshelled kernels) costs more per kilo and is what you want for cooking, grinding, baking or anything where you need a measured quantity. It also oxidises faster once opened.

When comparing prices between the two, double the in-shell price before you compare it with shelled. That is the only fair comparison.

Salted or plain?

Salted pista is roasted with salt brine; the salt is on the shell as much as the kernel, which is why in-shell salted is the classic snacking format. Plain means raw or lightly roasted with nothing added.

Pick plain if the pista is going into food, if you are watching sodium, or if you want to taste the nut itself. Pick salted if it's for a bowl on the table. Do not buy salted for cooking and expect to wash the salt off — it doesn't work, and you end up with damp nuts.

Seven checks before you buy

  1. Open shells. A naturally split shell is a sign of a mature nut. Mechanically cracked ones look different — the break is jagged rather than a clean seam. A high share of closed shells means immature nuts you cannot open.
  2. Kernel fill. The kernel should fill the shell. Rattling means shrunken or dried-out nuts.
  3. Colour of the skin. The thin papery skin on the kernel should be purplish-pink. Grey or dull brown suggests age.
  4. Smell. Sweet and nutty. Any paint-like or stale-oil smell means rancidity — pista is high in oil and goes off faster than almonds.
  5. Dyed shells. Shells dyed red or bright white were once common to hide harvest staining. Rub a shell with a damp finger; colour on your finger means dye.
  6. Uniformity of size. Consistent size means proper grading. A pack mixing large and tiny nuts has not been graded, whatever the label claims.
  7. Salt crust. On salted pista, a heavy white crust means over-brining — you are paying nut prices for salt.

Storage

Pista has one of the highest oil contents of the common nuts, which makes it one of the fastest to go rancid. Airtight container, away from light and heat. In an Indian summer, the fridge is genuinely better than a cupboard, and shelled kernels in particular are worth refrigerating or freezing if you won't finish them in a month.

Do not keep them in the bag they arrived in once it's open. Our storage guide covers the humidity question in detail.

Using them

  • Garnish: slivered green kernels on kheer, phirni, biryani or kahwa.
  • Mithai: ground plain kernels for pista barfi, kulfi and rolls — colour is what you're buying here.
  • Savoury: coarsely crushed into a crust for fish or paneer, or stirred through a pulao.
  • Snacking: in-shell salted, straight from the bowl.

If you're buying pista online

Decide the use first — snacking or cooking — because that settles salted vs plain and in-shell vs shelled before you even look at price. Then compare on a like-for-like weight basis, and ask about packing date rather than expiry date, which tells you much more about a high-oil nut. Our dry fruit price guide explains what actually drives the differences between packs.
