Why these look matte, not glossy

The dates that catch your eye in a market are often glistening. That shine usually comes from a glucose syrup glaze brushed on to improve appearance and add weight — quietly adding sugar to a fruit that already has plenty.

These are untreated, so they look matte and natural. A white bloom sometimes appears on the surface too: that is the fruit's own sugar crystallising, and a sign of an untreated date rather than a fault.

How are Kalmi different from Medjool?

Kalmi is firmer and drier with a chew that holds, while Medjool is large, soft and sticky. Kalmi is darker and more caramel in flavour. Neither is better — they suit different uses.

Do they have added sugar?

No. The sweetness is entirely the fruit's own. Some suppliers glaze dates with syrup to make them glossy; these are not treated that way.

Are they good for stuffing?

The best of the common dates for it. The firmer flesh holds its shape around an almond or walnut instead of collapsing.

What is the white bloom on the surface?
