Soaked vs Unsoaked Walnuts: Is There a Difference?

What About Nutrition?
You will often read that soaking “activates” nuts, doubles their nutrition or removes most anti-nutrients such as phytic acid. Walnuts do contain phytic acid, as most nuts and seeds do, but the evidence that ordinary overnight soaking makes a large difference to nutrition is limited. Soaking does not add protein, omega-3 or minerals; it mainly changes texture and taste.
Some people say soaked walnuts sit easier on their stomach. That is a personal experience worth respecting, but it is not a proven nutritional effect. If soaked walnuts suit you better, that is reason enough to soak them.

How to Soak Walnuts
- Take your daily portion, about 30 g (roughly 7 whole kernels).
- Rinse briefly and cover with clean drinking water in a bowl.
- Soak for 6 to 8 hours, or overnight. In hot weather, soak in the fridge.
- Drain and discard the soaking water.
- Eat the same morning. Keep any leftovers in the fridge and finish them within a day.
Common Mistakes
- Soaking too many at once: wet kernels spoil quickly. Soak only one day's portion.
- Leaving them out in summer: warm, wet walnuts can turn sour or mouldy. Use the fridge.
- Soaking stale walnuts: soaking will not fix rancid walnuts. If they smell sharp or stale, throw them away.
- Drinking the soaking water: it mainly contains bitter compounds from the skin; most people discard it.
Should You Peel Soaked Walnuts?
The thin skin loosens a little after soaking, and some people rub it off to make the taste milder. It is edible, so peeling is a matter of taste, not necessity.
