If a walnut has ever tasted sharp and left a dry edge on your tongue, the skin is why. Almost all of a walnut's bitterness sits in that thin papery layer — and the thicker the skin, the more you taste it. Kashmiri walnuts are known for noticeably thinner skin than imported varieties.
