Should You Peel Walnut Skin? Taste, Uses and Common Questions

Quick answer: You do not need to peel walnut skin. The thin brown skin (pellicle) is edible and holds a large share of the walnut's natural polyphenols, which is also why it tastes slightly bitter and astringent. Peel it only if you want a milder, sweeter taste or a pale look for a dessert. Soaking or blanching makes peeling easy.

What Is the Walnut Skin?

The papery layer covering the kernel is called the pellicle. It is naturally light to golden brown in fresh walnuts and darkens with age and heat. It carries tannins and other polyphenols, which give walnuts their gentle bitterness.

How to Peel Walnuts

Soaking method

  1. Soak kernels in water for 6 to 8 hours or overnight.
  2. Rub gently between your fingers or with a soft cloth; the skin flakes away.
  3. Use within the day, or store in the fridge for a short time.

Blanching method (faster)

  1. Pour boiling water over the kernels and leave for 2 to 3 minutes.
  2. Drain and rub with a clean kitchen towel, or use a toothpick for the crevices.
  3. Dry well before using.

Peeling every crevice is slow; most people remove only the loose skin.

Skin Taste and Freshness

Other Ways to Reduce Bitterness

  • Toast lightly for 3 to 5 minutes in a dry pan.
