A few closed shells are normal

Pistachio shells open on their own while the nut is still on the tree, pushed apart by the kernel swelling inside. In every pack there are a few that did not split fully — no producer anywhere eliminates them. They are perfectly good nuts, just harder to get into.

The trick everyone here knows: take an empty half shell and use its edge as a lever, twisting it into the seam. Works every time, and saves your fingernails.

Why in shell, not loose

Salt pulls moisture from the air, and a bare salted kernel goes soft within days of opening. Inside the shell air barely reaches it — which is why salted pista is almost never sold loose.
