How Much Saffron Should You Buy? A Practical Guide for Home Use and Gifting
Most people buy saffron in the wrong quantity. Some order five grams for a kitchen that uses a pinch at Diwali and find it faded two years later. Others buy half a gram for a wedding-season biryani marathon and run out in a week. A few numbers fix this.
How much is a gram, really?
One gram of good Mongra is roughly 400 to 500 threads. The exact count depends on thread thickness, and Kashmiri threads run thick, so treat this as a guide. It looks like very little in the box. In use, it goes a long way.
How many threads does a dish need?
| Use | Threads | Uses per gram, roughly |
|---|---|---|
| A glass of kesar milk | 3 to 5 | About 100 |
| A pot of kahwa for four | 6 to 8 | 60 to 70 |
| Kheer, phirni or halwa for four to six | 12 to 15 | 30 to 35 |
| Biryani or pulao for four to six | 15 to 25 | 20 to 25 |
| Festive sweets in a large batch | 30 to 50 | 10 to 12 |
These assume you soak the threads first. Lightly crush them and steep in a few spoons of warm water or milk for fifteen to twenty minutes before adding. Unsoaked threads give up far less, which is why people who sprinkle saffron straight into the pot think they need twice as much.
More is not better. Too much saffron turns a dish bitter and medicinal. If a recipe says a pinch, it means ten to fifteen threads, not a teaspoon.
Which pack size fits you?
The occasional cook: 1 gram
You use saffron for festivals, guests and the odd kheer. One gram covers twenty to thirty dishes and will comfortably last a year. It is also the right first order from any new seller, because it is enough to run the home purity tests and still cook with.
The regular user: 2 to 3 grams
Kesar milk or kahwa several times a week plus weekend cooking. Two to three grams is a sensible six to twelve month supply.
The festival or wedding season: 5 grams
If you are making sweets in bulk for Diwali, Eid or a family function, or you cook biryani for large groups, five grams makes sense and the per-gram price is usually better. Split it: a small working jar in the kitchen, the rest sealed and put away.
Larger than that
Ten grams and above is for caterers, sweet makers and resale. For a household it will fade before you finish it, unless several families are sharing the order.
The rule that overrides the rest
Buy what you will use in about a year, two at the most. Saffron keeps, but the aroma is at its best in the first year or two after packing. A smaller fresh pack beats a larger tired one. How to keep it at its best is in how to store saffron at home.
Buying saffron as a gift
- 1 gram is a complete, generous personal gift. The person receiving it gets months of use.
- Several 1 gram packs beat one large pack for weddings and festivals. Each stays sealed until it is opened, and you can give them to more than one household.
- For corporate or formal gifting, this is the one case where a GI tagged pack earns its premium: the documented origin is part of the gesture. For your own kitchen, the standard Mongra cooks identically and costs less.
- Saffron pairs naturally with kahwa, dry fruits or honey if you are building a Kashmiri gift box.
Do not judge value by grams alone
Two grams of Lacha can contain less usable saffron than one and a half grams of Mongra, because part of the Lacha weight is pale style that adds nothing to the dish. Compare grade first, then weight, then price. The grades and the rest of the pre-purchase checks are explained in the Kashmiri saffron buying guide, and the pricing logic is in why Kashmiri saffron is expensive.
If you are ordering now
Start with the 1 gram Mongra pack if you are new to us or an occasional cook. Other sizes and the GI tagged pack are in the Kashmiri saffron collection. Common questions
How long will 1 gram last with daily kesar milk?
At three to five threads a day, roughly three months.
Is half a gram worth buying?
For a single occasion, yes. For anything regular, one gram is better value and still small enough to stay fresh.
Can I use fewer threads of stronger saffron?
Yes. With fresh Mongra, start at the lower end of each range above and adjust.
