Guchhi vs Mongra — the honest version

Every saffron flower gives three red stigmas joined at a pale yellow style. Mongra is what you get when that yellow part is cut away and only the red thread is kept — more labour, less weight per flower, so a higher price per gram. Guchhi keeps the bunch intact. You are buying the same crocus from the same Pampore fields, with a portion of yellow style included in the weight.
That matters in one practical way: the colour and aroma live in the red part, so gram for gram Guchhi gives a slightly softer colour than an equal weight of Mongra. Use a pinch more and you land in the same place — which, at this price per gram, still works out cheaper. For everyday kahwa, biryani, kheer, phirni and milk, most Kashmiri homes have always used exactly this form.
