The white powder is sugar, not mould
This is the question we get most about figs. As a fig dries, its own sugar migrates to the surface and crystallises into a fine pale bloom. It is a sign of properly dried, untreated fruit.
The difference is easy to see once you know it. Sugar bloom is fine, even across the fruit and smells of nothing. Mould is fuzzy, coloured, sits in patches and smells sour. If you are ever unsure, send us a photo before eating it.
Dry or soaked — two different fruits
Dry, a fig is chewy and concentrated. Soaked overnight in water or milk it swells soft and juicy, closer to fresh fruit, and the soaking liquid turns sweet — drink it rather than pouring it away.

What is the white powder on the figs?
The fig's own sugar rising to the surface and crystallising — a sign of properly dried, untreated fruit. Real mould is fuzzy, coloured, patchy and smells off; sugar bloom is fine, even and smells of nothing.

Both work and they are almost different fruits. Dry, they are chewy and concentrated. Soaked overnight, they swell soft and juicy, and the soaking water turns sweet.
Why do they vary in size and colour?
Because the fruit is untreated. Sun-dried figs differ in size, shade and firmness from one to the next. Perfectly uniform figs usually indicate treatment.
How should I store them?
Sealed in a cool, dry place, refrigerated in humid weather. Keeping them airtight also slows the sugar bloom.
