What the grade code means
W is white wholes — undamaged, uncoloured kernels. The number is roughly how many make up a pound, so the smaller the number, the bigger each nut. W320 is the everyday grade, W240 a step up, W180 the largest.
When W180 is not worth paying for
If your cashews are being ground into gravy or blended into a paste, W180 makes no difference to the finished dish — a smaller grade does the identical job for noticeably less. W180 earns its price where the nut is actually seen: a bowl for guests, a gift box, garnishing.

Questions
What does W180 mean?
W stands for white wholes and 180 is roughly how many kernels make up a pound. The lower the number, the larger the nut. W180 is the largest commercial cashew grade.
Is W180 worth it for cooking?
Usually not. If the cashews are being ground into gravy or paste, size makes no difference and a smaller grade does the same job for less.
Roasted or raw?
Raw and unsalted, so they suit cooking as well as snacking.
How should I store them?
Sealed in a cool, dry place. Cashews absorb moisture and lose crispness quickly in humid weather.
